Ugly Noodles

Ugly Noodles

These noodles may look pretty ugly, but they’re a breeze to make and super flavorful.

What goes into ’em?

  • Whole wheat pasta (your preference)
  • chicken (either baked or pan seared)
  • diced tomatoes
  • thinly sliced white onion
  • garlic
  • chicken stock

Additionally you could add:

  • sautéed/roasted peppers
  • white wine
  • other veggies of your preference
  • Cheese for garnish

The method is simple, and quick too if you’re on a time constraint.

  1. cook pasta until barely firm (if it’s shape pasta, I cook it for 5-8 minutes, if it’s linguine or spaghetti, I cook it for 3-5 minutes)
  2. While the pasta cooks, warm up a large skillet. When the skillet is hot, add olive oil. When the oil is hot (shimmering is an indication), add the onion and garlic and sauté until onion is translucent and garlic is fragrant, about a two minutes.
  3. Add the tomatoes, juice and all, reducing the heat. Allow to simmer for 3-4 minutes or until liquid is reduced.
  4. Add pasta straight from the pan adding 1/4C of cooking water to the pan with the tomatoes.
  5. Turn up the heat and add 1/4C chicken stock, bring to a boil and reduce heat, allowing the pasta to simmer and soak up most of the liquid, cooking it for 5-8 minutes or until desired doneness is reached
  6. Add pasta to warmed bowl and top with sliced chicken breast.

Feel free to serve with salad to complete the meal.

I’ve had a bunch of different chilies. At the beginning of the season, I mentioned how autumn is the perfect time of the year to bake things. Since then, I have incorporated baking into my cooking repertoire more than usual. A little while back, I made the perfect bisquick chicken. It was perfectly baked and crisp on the outside and still juicy, yet cooked through on the inside. The parmesan chicken melts were the same way. While baking was only one of the steps, I didn’t hesitate to use the oven like I so often do in the summer. A while ago, I learned about this wonderful game on the android market called “Alchemy”. The premise of the game was to start with the very basic elements (earth, air, fire, water) and to combine them to create things. For instance, water plus air gives you a rain cloud. And a rain cloud plus earth gives you a plant. Earth plus earth gives you PSI. When you combine the plant plus PSI you come up with coal. It goes on like that, so on and so forth until you’ve created all of the “elements”.  Continue reading →

I’ve never actually “visited” chicken alfredo pizza on the blog before. I’ve covered alfredo a few times; from in pictures, to the recipe, to twisting the recipe to use Gruyère cheese even. A couple days ago, I was standing in the grocer killing time. I honestly didn’t mind because it was a grocery store and I’m a foodie, a chef in the making, so this similar to letting a child run loose in a candy shop. As you may have figured out, I absolutely dig pasta and love to make it whenever possible, so I was hanging out in the pasta and pasta stuff isle in the grocery store. I went to pick up a can of diced tomatoes with oregano and garlic in them, when I saw the gnocchi and decided that I was going to make it. I wasn’t going to make it that night because we had ordered pizza, but I was going to make it soon.  Continue reading →
